Bell’s Brewery Two Hearted Clams

Ingredients
4 slices bacon, chopped
1 small onion, chopped
2 cloves garlic, chopped
3 pounds little neck clams (usually sold by the bag), scrubbed well
1 cup Bell’s Two Hearted Ale (or Best Brown Ale if you’re looking for a deep, rich broth)
chopped tomato (optional)
Fry bacon in a medium pot until soft and golden, about 4 minutes. Add the onion and garlic and continue cooking until the bacon is nicely browned and the onion is tender, about 4 minutes longer. Drink a Bell’s beer.
Stir in the clams and add the Bell’s beer of your choice. Cover the pot and steam the clams for 6 to 7 minutes, until they open. Chuck any clams that don’t open, with three pounds it’s not worth the risk! Drink a Bell’s beer.
Stir gently to mix with the bacon, garlic, and onion. Garnish if you wish and serve immediately with a Bell’s Two Hearted.
Yield
About 4 servings if you’re in the mood for company, but it works great for 2!
